So I’ve been sick 😦 So I haven’t done much cooking that involves any more effort than throwing something in the oven or microwave! So, this week I decided this Meatless Monday would consist of some of my favorite vegan snacks! So here are 5 vegan snacks I have in my house right now, that i’m obsessed with.
- Baked apples with granola.
- I LOVE APPLE PIE. I’m like obsessed with it. So when im craving something sweet this is perfect! I chop up about one or two apples depending on the size, toss in a bowl with a teaspoon or two of earth balance butter, a sprinkle of sugar, and about a teaspoon or two of cinnamon. After its all mixed and the apples are covered I put them in the microwave for about 4-5 minutes to soften. AND THEN BAM. Delicious baked apples that easily takes care of any sweet tooth I had. Now sometimes I eat them just the apples and sometimes I’ll add some vegan protein granola on top, I recently bought this peanut butter whole grain cluster one and man, it’s so good and has 10g of protein per serving!
- Swedish Fish.
- I couldn’t tell you how I came to love Swedish fish, it just happened, it’s actually terrible because I have to stop myself from eating the whole bag. THEY’RE SO GOOD. You can imagine by surprise when I found out that they’re VEGAN. What?! I like double triple verified because I thought no way, too good to be true, but it is true and I couldn’t be happier!
- Earth Balance Popcorn.
- -On a very recent trip to the grocery store, my mom and I came to this aisle that usually has all their sales stuff in it… except now they made it into an organic, gluten free, vegan aisle! I’m on cloud nine… and to make things even better… my mom is looking at everything and even picks out a few things she wants to try. I was so happy. ALMOST as happy as I was to look up and find Earth Balance vegan aged white cheddar popcorn. WHAT?! I love popcorn and anything cheesy flavored so to see that this stuff was not only both but also vegan. Man, so excited and even better? When I tried it, it was so good. New favorite snack hands down! Now this is just your regular stop n shop, so to see that these kinds of stores are having more vegan options makes my heart SO happy!
- Roasted Cauliflower
- A lot of people have this as a side to their meal and I do too, but sometimes when I’m hungry just not sure what I want… I’ll cut up some cauliflower, throw on a few spices and cook it up in the oven and just snack on it! It’s crazy to think a few months ago I had never tried cauliflower and now I’ve tried it about 7 different ways and I’m obsessed with it!
- So Delicious, Dairy free, ice cream.
- I’m not a fan of coconut anything so I always make sure I grab the ones that are made with almond milk. I don’t have it all that often because well it is quite expensive for me but as a treat it’s always so yummy! I’ve had the vanilla kind many times and the one in my freezer right now is Mocha Almond Fudge, YUM!
