Meatless Monday: For the love of tofu.

Sometimes I have seriously no idea what I want to eat, but I’m hungry. So I’ll just find some things, throw it together and hope for the best. Sometimes this works, sometimes it doesn’t. In this case, it worked.

I recently figured out that as much as I love Tumeric, I’m allergic. It’s so depressing and really sucks. Maybe I was overeating it, I don’t know, but Tumeric was the culprit. So I wanted to find something else that I could flavor my tofu with, and on this particular day I figured out that honey mustard matches wonderfully!

Ingredients.

1 container of firm tofu

garlic powder

onion powder

salt

cayenne

1/2 cup of broccoli

1/2 cup of cauliflower

1 tomato

honey mustard (Vegetarian Ingredient, but they do have vegan “honey” mustard)

Directions.

Drain your tofu.

Put the 1/2 cups of broccoli and cauliflower in a frying pan, add seasoning as desired.

As they’re cooking, cut up your tofu in chunks, I just chopped it up like I would as a scramble.

When broccoli and cauliflower are done, place in a separate bowl and put the tofu into the frying pan, season as you like, I stick to the usual that I mentioned above, garlic powder, onion powder, cayenne, and salt.

Once it seems the tofu is about done, I added a few dollops of honey mustard and let it simmer in it for a few minutes.

Then I added the broccoli and cauliflower back in and mixed it all together.

Once you’ve got it into a bowl, ready to eat, I added in the tomato.

Very easy, and the flavors work wonderfully together. As an option, you could toast up a couple pieces of bread and scoop some onto it and eat it that way.
