Meatless Monday: Dessert!

I’ve never been much of a cake person but pie on the other hand? yes, please. Apple and Pumpkin are my absolute favorites and I stumbled upon a super easy recipie for vegan mini pumpkin pie on Brie and Nikki Bellas youtube channel in one of “chef brie’s” first new cooking video since having baby birdie! I absolute love when she puts up these videos, I love learning these new recipies and I have yet to try any of them and not have them be delicious. So I want to share this yummy dessert one with you as well.

Ingredients:

2 3/4 cups of pumpkin puree

1/4 cup maple syrup

1/4 cup sugar ( Brie used Coconut sugar, I had regular sugar on hand, so I just used that)

1/4 cup unsweetened plain almond milk

2 1/2 tbsp cornstarch

1 3/4 tsp pumpkin pie spice

1/4 tsp sea salt

Instructions.

  • Brie used a food processor for this, but you can of course just use a blender. I had a food processor that we had gotten from our aunt last year that I’d just been looking for an excuse to break out and use and this was the PERFECT EXCUSE.
  • put all ingredients together in the food processor/blender and blend together until consistency is to your liking.
  • THATS IT.
  • Brie recommends either doing this the night before and letting it set in the fridge, I also found that if you let it set for at least four hours in the fridge, it works out just fine. It gives it that pumpkin pie consistency and delicious taste.
  • I didn’t use crust. I just ate it straight out of a small bowl.  And it was delicious.

I highly recommend trying this out especially with the holiday coming up! Just make sure you give it plenty of time to get cold and set!
